Single Estate Bairrada Red Wine, from Quinta Bageiras, one of the most traditional producers existent. This is a Garrafeira red wine, the highest classification there is! Extremely Limited Availability!
The Grapes used to produce this wine come from very old vines,over 90-years-old, then crashed and fermented for 5 to 8 days in a stone lagar without destemming (the berries are not removed from the cluster). Subsequently, they are pumped down with a wooden punch down tool, several times a day, until they reach the right intensity. Afterwards, the wine finishes its fermentation in old wooden tonels. While it rests, it is decanted and aged in the same tonels for about 18 months. It is bottled without fining or filtration. All these processes are done by hand. It is a wine produced only in exceptional quality years.
Drink at 16 to 17 Celsius Degrees.
Pair with a well seasoned delicate roasted red meat or medium strong cheeses.
